Fiber is a complex carbohydrate. So essentially, if you take a bunch of sugar molecules and you fuse them all together and make a super long chain, that's fibers. Because it's so complicated, we have done some things to try to simplify our understanding of fiber. We've broken it into two main categories, soluble and insoluble fiber. And there are certain properties to soluble fiber, but the main one that people need to know about is that it's food for our gut microbiome.
