The Art of Making Cheese in Europe
In 20 o six she opened her little store, and it really was little. Was about the size of a shoe box, with just a walk in fridge and a counter. And she opened the gate that first morning and thought, is anyone going to come? Does anyone know anything about cheese? She had been inspired in florence. But she did realize, when she looked at the way cheese making was done in europe, that it was a very different sition. Consumers were loyal to their region, and they knew all about cheese too.
