The SFO, this sub-fournical organ, reacts to serum osmolarity and angiotensin 2. It also receives direct inputs from whatever it is that we're placing in our mouth during eating and drinking. The SFO uses that information about the composition of the food we eat to predict what's going to happen to our future blood osmolarities. And it changes our behavior accordingly by telling our brain to think different things.
