Dr. Sonnenberg: I started off as a glycobiologist, which is a scientist that studies sugars and we actually have these carbohydrates structures that coat each one of our cells in our body. Many people have heard of mucous secretions that are how our body keeps microbes on our cell surfaces at a safe distance. Those are made largely of carbohydrate structures. He says he has kombucha growing right next to his desk; had some kombucha with lunch just now for breakfast. One of my papers now is avocado toast with kimchi. So some synergy there.
