Kellam: A lot of people now, over the past 18 months, have discovered this love of cooking at home rather than going out to eatand is cheaper. He says restaurants will need to move further and further away from the utilitarian model that's been in place for hundreds of years. Kellam: Restaurants should double down on providing atmosphere, warmth, love service - all that kind of stuff.
