"I cringe when I watch all of the, all this, these hops basically going down the drain after, after their use," he says. "These craft, these IPAs, they used to be 5% now, they're 6.7 and 14 bucket loads of hops in them." It's like California Cabernet's: They used to be 12% alcohol; now they're 15 and a half or 16%. He likes German beers that are light on the hops but more hopsy than Bavarians.
