They're tangled up with all these plant secondary metabolites which are gently and really very strong tasting So you need a lot of processing To turn plants into animal like thingsYou need from a less processing to turn microbes into animal like products. And so there's enormous potential for replacing dairy for replacing meat for replacing fish For replacing eggs just making much much better substitutes than you can make out of plants. But I think we'll quickly start going beyond that and start saying well actually there's all sorts of other things You can do with that which we can't even imagine at the moment anymore.
