The History of the Cod Trade
Cod was making New Englanders wealthy but newfoundlanders not so much. While Cod was building American wealth and even independence those fortunes were also deeply entwined with the slave trade. Originally enslaved Africans were fed salted beef from England but salt cod was cheaper. Any salt cod that was bad quality the fish had split it was too salty or not salty enough it had been handled badly went to the Caribbean. And salt cod is still a big part of Caribbean cuisine today.
