The Bioactives in Saffron Are Directly Related to the Taste and the Dye Properties

There's 150 different compounds though in saffron and so far we've only even been able to identify like a third of them. The bioactives are directly related to the taste and the dye properties and this will give us some clues as to where crocins come from. We'll also talk a little bit about how the stick mass look during the growth cycle, which could help with our research.
