The Principle of Japanese Cooking
The principle with Japanese cooking is based on a philosophy called Gogyo Se Tzu, in Chinese it's called Wuxing. There's white that expresses purity, red is fire, green, and blue. These colors bring comfort and appetite, black stabilizes and harmonizes the plate. When you bring these five colors or five basic taste or five senses together, you will find a sense of harmony.
