Everything is something known as pyralysis. Pyralysis is kind of a fancy term for molecules breaking down and releasing gas like c o two. And within the coffee bean there are strong cellular walls made of cellulos. So again, this reaction is happening, and these gases are being released,. Now pressure is being put on the cell walls within the coffee beans. That pressure will build up again to the point that the cell walls will crack.
