The Role of Oysters in the Civil War

By the Civil War, almost half of the world supply of oysters is coming from the Chesapeake. It was a post-Civil War development that Maryland allowed dredging. There were all these New England Packers sending dredge boats down to the Chesapeake area because they had fished out most of their oyster grounds. This statistic I love is that from Christfield, Maryland on the eastern shore every morning, a 20 to 30 railroad cars full of oysters were leaving.
