How to Optimize Malt Recovery

Malt analysis seemed overwhelming to me for the first six or seven years of my career. It didn't really click until I went to school and really understood what was happening during malting. What are brewers looking for when it comes to a milling malt? Having a consistent, uniform size distribution is important. We want to present the mill with basically the same assortment of particle sizes for as long as we possibly can.
