The aim of the game is to keep glucose levels in your blood the same. In addition to insulin, you have these glycogen reservoirs that are required to maintain a steady state of glucose in the blood. The liver can also create glucose from non-carbohydrate sources through gluconeogenesis. If you're exercising or you're fasting and don't find food, these are all very important evolutionary mechanisms which would have been critical during famine.
