I was only a waiter for about eight years, but it felt like forever. A friend of mine says that there shouldn't be national service, but everyone should have to work in restaurants for a year or two because it changes you. I remember when i started work in a restaurant in london, i was 20, maybe 21, and there was a guy there, and he was 27. And we all looked at him with such pity. He's still here. Meanwhile, i'm now in my thirties, i'm still working in a restaurant. That's really beautiful. You were asked this question, who or what would you say had the biggest influence on your career? And
