Think about this, things that we take commonplace. The first lunatic that decided I'm going to put peanut butter and grape jelly together. People have been trying to one up it ever since. So an idea that puff pastry could have happened in the 1200s, not in 1645. It's like, you got to like tune out your inner demons and your harshest critic a little bit and just fucking go out there and do it.
