The Context of Chinese American Food

The NBA finals are going to be in Miami. I was thinking about this. Every time we try to, every time the conventional wisdom says, oh, if you're going to make a higher end Chinese restaurant, the carbon of Chinese American food, you have to change the food completely. But what people like sweet and sour pork, people like spaghetti and tomato sauce, people like fried rice. Why can't we just do that, but change the context? And they say, "No, no, no, you must change it"
