The chef used to work at a restaurant called Cyto in Los Angeles. He would determine if you could sit at the sushi bar or he would push you off to a table. The place never had more than two to three people in it at any given time. One of the best experiences I've ever had was, on his birthday, he would make his ideal birthday meal for you.
