The chemistry of coffee is pretty complicated, not surprisingly. One paper said it's complex and poorly defined chemical reactions. So when the beans come to the roasters in their green state, they have a lot of different molecules. And all this chemistry transforms these little green coffee beans into the delightful, smelling, dark brown coffee beans that we know and love.
