The trade off is utility, essentially, where you're still supporting your downstream services or supporting other types of workloads. And putting a security hat on, utility on one side is also utility for any attacker, right? And so you need to balance those trade offs. In combination, tokenization and encryption allow you to both centralize the data in one place, limit the number of people that have the keys and then lock it down tightly using encryption.
