Coffee Roasting - The First Crack?

The coffee bean actually cracks open to give an out to all the vapor pressure that's building up. The first crack is supposed to happen around two o five celsius, which is interesting, because water begins to vaporize. Once that first crack occurs, then the roasting process shuts down.
