The Differences Between Traditional and Smoked Malts

In the old days all the malts were smoky so you would not do a blend. Decoction mash is important with the infusion we relatively quickly would get a problem in the degree of attenuation and also flavor wise. We don't have that much of a yield per batch we use a relatively high amount of mall per batch. The classic smoke beers and medicine style beer which again is close to the historic stronger beers of Bamberg 13.5% original gravity 5.1%.
