The TDS of Coffee

The coffee industry's understanding of what good water is for coffee essentially boiled down, they're patented to TDS. To someone in professional academia, TDS was an overly simplistic measure because looking at just the amount of total dissolved solids in the water doesn't tell you how much calcium carbonate should be in your water. It also doesn't tells you what buffering capacity is of the water and this is very important in specialty coffee.
