The Antioxidant System and Hormesis

The antioxidant system is basically built on a variety of enzymes, nutritional co-factors and vitamins. The key players in the antioxidant system are vitamin E, vitamin C, glutathione, selenium, iron, manganese, zinc, and copper. Hormesis is the idea that a little bit of something bad gives you benefit because of your response to it. And so the polyphenols in fruits and vegetables are intrinsically toxic to cells but at the levels found in the diet are generally beneficial.
