There's so much alcohol inhibition in these beers by the time they're 12, 13%, that like you do see flavor development and change. We've never seen anything that like, we've never taken one of those casts and I'm like, oh, let's do this with that. But yeah, generally, and with really dark beers, it seems like you have that kind of Venice leathery thing that gets to develop.
