The Origins of Church Plain-Shat Singing

The body of plain-chant in the Catholic Church is enormous. Each chant had a kind of beginning and end that could be changed on different days. So it took years to learn all this stuff. They did not sing modes, like Dorian mode or keyboard and play D to D. That's what I think happened. And we have things like Dorian cadence would be this. Sounds very archaic, medieval, yes? Instead of... they never sang that. Never. In the 18th century, there is not one source that tells us they say.
