Apple, We've Just Solved Your Crisis for You
Apple is trying to keep it simple with its watch face and focus mode settings. I would suggest that perhaps if you don't have a setting on the watch face, then you could override it in the focus mode. There we go, Apple, we've just solved your crisis for you. But yeah, fingers crossed, there'll be options to improve this a little bit further which will be pretty good when we get them.
