The Jewish Priesthood and the Conversion to Christianity

There's a development historically of these different types of church offices, and the one that's just really surprisingly hard to pin down is the priesthood. So I was fascinated with that line in Acts, chapter 6, verse 7, where you've got a bunch of Jewish priests are converting over to Christianity at that point. And then it says nothing else about them. They just disappear,. You see the Jewish priesthood referenced in Hebrews and other sections, but it's not as a current thing except for that one little verse. Do you have any thoughts on what happened there?
