Espresso Machines Take a Big Step Forward

Early espresso machines were brewed using super hot steam. This is not water, this is steam. When you make coffee with super hot water, and steam is by definition, above the boiling point of water, the water is extracting a lot from the coffee. The other thing is that the espresso doesn't resemble what an espresso looks like today at all. Isn't like more similar to the mocha. George O'odoncillo: It's nowhere near as deep and luscious as an espresso - there's no crema.
