The Origins of Nutmeg
The liming process hides many imperfect or quirky nuts. Nuts which have been riddled with wormholes are stopped with a paste made of flour, oil and nutmeg powder. A small quantity of baracic acid will accomplish the same purpose as lime. Paris white and burritis will serve to mask the identity as well as the defects. The pinang nutmeg, which are generally not lined, are considered the best. There is also a demand for an elliptical shaped nutmeg of rank flavor called macassars.
