In extreme obesity, collagen gets laid down as scar tissue or fibrosis around dead adipocytes. If you delete the genes for those proteins involved in forming a lipid droplet, then you exacerbate or cause metabolic dysfunction in animals. You can also genetically manipulate matrix metalloproteinases (MMPs) which are enzymes used to digest the collagen matrix and reorganize it.
