The first thing you're testing, especially if you're starting from scratch, is whether this is a thing that you're going to want to do long term. So I definitely recommend that you don't launch your community as like a never ending membership the first time around. If you're doing a cohort based course, can you do a cohort that's fully live? There is nothing that you're building in advance. And it gives you a really good feeling of the different things that you have to work on for when you actually launch an official version.
