Is It Necessary to Dry Out Fresh Posta?
If you're making your own fresh posta, it's not entirely necessary to dry it out. drying takes space and equipment and time and a lot of energy. You really don't wanto haw to make it all that often,. unless you that is what you love to do. We take about ten % of moisture off of our posset in order to give it a certain amount of chew and aCertain amount of bite. And we actually dry it overnight before we use it.
