Only five % of all the yeast that will work on a wild yeast fermentation come from fruit. 95% comes from the build s and the equipment. A certain epicla yeast will start everything off, and then they'll die out at one or two percent alcohol. And this happens starting in the autumn, and will finish off some time in the spring.
