The choice of weapon is just going to be more predicated on what was available to the offenders than anything else. A lot of blood is occurring from these defensive injuries. Imagine the force somebody is using with the knife in order to kill. It's not gentle stabbies. There is a lot of force and these knives will just slice right through. I mean, fingers will be taken off massive incisive wounds. So it really speaks to the level of violence and how aware the victim is of the attack.
