Is That How They Separate the Fat?

i-Report: Is boiling the fat how they separate it from the meat? It seems like that's what they're up to. They seem to object and say, the meat's not boiled yet,. Like, don't stick your fork in there yet. Seems to be what's going on there. But maybe one of our listeners will have done some more study in this and can let us know.
