How to Cook Better Than Jerky
The first time I've heard of it was in Peter Hathaway Capsticks book. They talked about it all the time. And what they would do is make elephant meat built on them. You just cut their lean meat into long strips and you salt it. It controls the bacteria. And you put black pepper, coarse ground black pepper on it, which keeps the flies off. And you just air dried. Way better than jerky. A couple of pieces is lunch. Right.
