The Virtue of Local, Seasonal and Cheap

Great grand grandparents ate food which is local, seasonal and cheap. They don't cook more than they are going to eat at a clar meal. But that flows from necessity because there are no fridges so they can't store food. So out of necessity, you are eating local,. seasonal and cheap, and that becomes a virtue. At the same time, it strikes me that our great great grandparents didn't have access to either a lor of the food or the knowledge that we do. We are surrounded by so many different kinds of foods to day that our our grandparents would not have known. How does one evolve a set of values around what one is to eat?
