In 18 50, the city is rapidly transformed by brand new immigrant groups. The irish and germans would bring their own culinary traditions with them. Many of these were found on the bottom floors of the tenement houses in which they lived. There had been nothing like this place for middle class, working class new yorkers. But we get the idea of a lunch counter from this idea of people going to a bar slash counter,. getting this free food provided to them if they stay there and drink day.
