The Casual Diner of the 90s
I think the casual diner of today doesn't maybe see what New York was like in the 90s because it was very structured and very different. You know, John then's initial partnership was with Fabrizio Ferri from Adustria. So we took a lot of risks. We were buying crazy things from everybody. A lot of like liver and like, you know, you could put veal liver on and feel comfortable buying 20 pounds and know they're going to sell it out. Because you were pushing it or because that was just the taste of the audience and the crowd. Taste audience, taste crowd, a little more vagabond.
