The reason we have the FDA today is things in large part to an imperfect fellow named Harvey Wiley. He assembled a study made up of some very iron gutted fellows who volunteered to be poisoned. And ultimately, his work led to a passage of law in 1906 that eventually led to the FDA. Today, they're tasked with determining safety standards for food manufactured in or imported to the US overall.
