The Moralization of Espresso
I agree with this objectification of espresso as a thing that should be a certain way. I think it's what was it like 10 or so years ago, a very interesting thing happened. Many, many things that people are thinking now about coffee have been thought before 20 years,. 100 years, you know, X number of years ago. And once you're unable to taste the agriculture anyway., So you might as well give them something that pairs beautifully with milk.
