The ortalan is eaten whole with or without the head. The traditional French way to serve it is if it's with the head, the head is covered with a napkin or a towel. And then I also have it's illegal to eat this. Not because of like the cruelty, because the preparation of the bird involves force feeding and drowning it to be consumed whole.
