What Is a Mustard?

We know about at least 40 species of mustard plants. The most popular is black mustard or brassica nigra, which originated in the Middle East and Asia minor. There's also brown Indian mustard from the Himalayas known as brassica juncia; white slash yellow mustard brassica hirta.
