The Importance of Viability in Brewing
Viability is fairly easy to measure with methylene blue or methylene violet. These cells that stay darker are dead for the most part. So it's still the mainstay laboratory test for brewers yeast. If you have a lot of dead cells, there's probably a lot of other cells that aren't very healthy.
