When you're ready for the meat, you flip it up green. Green means go, get me all of the hot meat sticks. The waiters do seem particularly sexualized in their costumes of tall, shiny cowboy boots and literal gaucho pants. Next guy comes by with linguissa, these incredibly flavorful spicy sausages. And we noticed that the sausage waiter is, by far, the most handsome waiter working that night.
