So the technique of spat talking is so you know, you have the you have the bird. And what you do is you actually just you follow you find the backbone of the bird. That's right. You just basically cut it out. Like you cut down one side of it, cut down the other side of it and you take the whole thing out. When that's gone, you're like can open up like a book and you kind of flatten it out. I typically cook mine at 425 or 450, but 425 for 45 minutes. Then I let it rest for about 15 to 18 minutes.
