My late mam loved making changeri with flank stake, but earlier on in her life, it was usually brisket. For the most part, i just ignore all that ant. My mam used to make it with a combu dashe. So she'd start with the kelp as the the liquid. And i also don't do the step. A lot of recipes included my mam, they would degorge, they would soak the meat in the water to remove some of impurities in the blood.
