Chemistry has had a amazing impact on our food system. But i think there may be significant unintended consequences of process fouds that no longer have diverse microb metapolites in them. Ultimately, like the micro organisms that we work with, and biology in general, it is a very systems laval process. Any change can actually have many different outputs in terms of chemicals, metabolites and ultimately taste, sensory, health, nutrition.
