The conditions needed for sprout germination are the same as those foodborne pathogens like salmonella or E. coli like to grow in. When you cut these products, they become much more able to sustain the growth of bacteria because of all the sugary juices that are coming out of them. So I would say I don't tell people to avoid cut fresh produce, but you may want to think about who is consuming that. If it's someone that has a elderly or has an immune compromised system, you're better off getting the whole fruits and just cutting it out yourself or vegetables.
